Games that use dice and the dice themselves date back to the Crusades, but current craps is only about a century old. Modern craps evolved from the old Anglo game referred to as Hazard. Nobody absolutely knows the birth of the game, although Hazard is said to have been made up by the Anglo, Sir William of Tyre, around the twelfth century. It is theorized that Sir William’s soldiers played Hazard during a blockade on the citadel Hazarth in 1125 AD. The title Hazard was acquired from the castle’s name.

Early French settlers brought the game Hazard to Acadia. In the 18th century, when displaced by the British, the French moved south and found sanctuary in the south of Louisiana where they a while later became known as Cajuns. When they departed Acadia, they brought their best-loved game, Hazard, with them. The Cajuns simplified the game and made it fair mathematically. It is said that the Cajuns changed the title to craps, which is derived from the name of the bad luck toss of snake-eyes in the game of Hazard, known as "crabs."

From Louisiana, the game extended to the Mississippi river boats and throughout the nation. A few consider the dice builder John H. Winn as the father of modern craps. In the early 1900s, Winn designed the modern craps layout. He created the Don’t Pass line so gamblers can wager on the dice to not win. At another time, he established the boxes for Place bets and added the Big 6, Big 8, and Hardways.
